Basted Eggs with Microgreens
Ingredients:
2 pasture-raised eggs
1 tablespoon butter made from grass-fed cows
1/4 cup of filtered cold water
A handful of organic microgreens (e.g., radish, broccoli, or pea shoots)
Kraut or fermented veggies
Unprocessed Sea Salt and freshly ground black pepper, to taste
Handful of chopped fresh organic parsley
Tools Needed:
Small stainless steel or cast-iron pan
Lid that fits the pan
Instructions:
Heat the Butter: Turn the heat to medium-high and add tablespoon of butter to the pan. Allow to melt just enough to coat the pan.
Crack the Eggs: Crack each egg into the pan and watch for the egg white to turn opaque and slightly bubble up from the pan.
Add Water: Add 1/4 cup of water to side of pan (not on top of eggs), to coat the pan bottom with a thin layer of water. Gently tilt the pan slightly to move water all around and under eggs.
Cover with Lid: Cover the eggs with a fitted lid, and let cook for a few minutes. Yolk should be soft to the touch with some firmness for an over medium finish. You can turn off the flame for a minute to slow the cooking down at the end to achieve the perfect yolk texture.
Assemble: Once yolk is to desired done-ness, remove immediately from pan and place on top of microgreens onto plate, allowing for the greens to slightly cook under the heat of the eggs. Pour any excess butter on top of the eggs.
Yogurt Parfait with Raspberries and Granola
Ingredients:
1 cup unsweetened plain organic yogurt. For dairy, use only pasture raised / grass fed. For plant based use organic yogurts without fillers or oil added
1/2 cup fresh organic raspberries or other local / in season fruit
Sprinkle of bee pollen
Instructions:
Layer: In a small bowl or glass, layer the yogurt, raspberries, and sprinkle bee pollen on top
Serve: Enjoy immediately.
Hot Matcha Tea
Ingredients:
1 teaspoon organic matcha powder
1/4 cup hot water (not boiling, around 175 F)
3/4 cup warm frothed milk of your choice. For dairy, use only organic pasture raised / grass fed. For plant based use organic milks without fillers or oil added
Instructions:
Sift the Matcha: Sift the matcha powder into a small bowl or mug to remove any clumps.
Add Hot Water: Add the hot water to the matcha and whisk vigorously with a matcha whisk (chasen) or a small whisk until frothy.
Add Milk/Water: Gently pour the warm milk (or hot water) into the matcha mixture.
Serve: Enjoy immediately.
